Merida and Campeche go ‘Gourmet’

MERIDA — As we previously announced here on TYT, this past Saturday September 2 at the restaurant “La Tradicion” there was held a magnificent gastronomic event, with a five-course meal complemented with Mexican wine and also with delicious cocktails made with the famous local liquor Xtabetun from Casa D’Aristi.

At the event TYT talked with Chef David Cetina, owner of the restaurant “La Tradición”, where the event took place, and he told us this: “I’m very happy of having such talented chefs, that are also my friends, collaborating here today in this event Sabor a Campeche, which is a very important place for me because my grand-mother was from Ciudad del Carmen, Campeche, so I have strong bonds with the state”.

At the event were served 5 delicious plates created just for the occasion that mix the local and traditional ingredients with the avant-garde ways of cooking. Chef Cetina explained the menu to us like this:

“Chef Patrick starts the meal with an Esquite (cup with boiled white-corn grains), with chaya (a local herb), crab claws, habanero pepper mayo and roasted garlic. The second plate belongs to Chef Luis Barocio that cooked a fresh octopus from Celestún, firewood cooked with black spicy dressing. After that Chef Roberto Solís served a stuffed deer filet, coal cooked with aromatic herbs served with hummus. The fifth course was in charge of Chef David Cetina from “La Tradición” who presented a delicious compressed firewood roasted pork accompanied with an exclusive Xtabentun cocktail made by Casa D’Aristi for a perfect mixture of tastes. Finally the dessert was in charge of the Chef Christian Bravo that served a stuffed pineapple with Xtabentun, coconut and chaya powder.”

Also Chef Patrick Cros from Campeche, as the principal organizer of the event, told us his advice about the event: “At 1 o’clock we started receiving the first customers at this event named “Sabor a Campeche”, that is part of the Sabor a Campeche Tour, that in the next weeks we will be traveling around the country to promote the Convite Expo-Gourmet Campeche 2017, everybody is invited to join us and to enjoy the event”.

Both chefs extend an invitation to join “CONVITE Expo-Gourmet Campeche 2017” that will be held in the beautiful city of San Francisco de Campeche, November 17 to 19.
