Ever heard of the Mexican-Swiss Enchiladas?

Wondering what to cook for your next meal? These Swiss Enchiladas (Enchiladas Suizas) with manchego cheese au gratin are the best option for a casual or formal dinner. You can make the green sauce as spicy as you like and top it with avocado and cream before serving.

Ingredients

  • 1 kilo of green tomatoes, washed, disinfected and dried (for the salsa)
  • 5 serrano chiles, (for the sauce)
  • 1/4 onion, (for the sauce)
  • 1 clove of garlic, (for the sauce)
  • 1 sprig of fresh cilantro, washed, disinfected and dried, (for the sauce)
  • 1 cup sour cream, (for the sauce)
  • 1/4 cups chicken broth, (for the sauce)
  • 3 tablespoons oil, one tablespoon for the sauce and two tablespoons for the enchiladas
  • 1 pinch of salt
  • 1 pinch of pepper
  • 8 corn tortillas, for the enchiladas
  • 2 chicken breasts, cooked and shredded, for the enchiladas
  • 1 cup manchego cheese, grated, for garnish

Preparation

Preheat the oven to 200°C.
For the sauce, boil the tomatoes and chiles until the tomatoes are cooked.

Blend the tomatoes and chiles with the onion, garlic, cilantro, cream and chicken broth.

In a medium saucepan heat a tablespoon of oil and fry the sauce for 5 minutes over low heat. Season and set aside.

In a frying pan, heat the rest of the oil and fry the tortillas on both sides for one minute to soften. Drain.

Fill the tortillas with the chicken. Arrange in a baking dish and cover with the sauce and cheese.

Grill in the oven for 5 minutes.
