Cochinita pibil is a traditional Mexican dish that originated in the Yucatan region. It is made with pork marinated in a blend of spices and cooked until it’s tender and juicy. Here’s a recipe to make cochinita pibil at home:
Ingredients:
For the pork:
- 2 lbs pork shoulder or pork butt, cut into chunks
- 1 cup orange juice
- 1/2 cup lime juice
- 4 garlic cloves, chopped
- 2 tbsp achiote paste
- 1 tsp dried oregano
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/2 tsp ground allspice
- Salt and pepper to taste
For serving:
- Corn tortillas
- Pickled onions
- Cilantro
- Lime wedges
Instructions:
- In a large bowl, mix together the orange juice, lime juice, chopped garlic, achiote paste, oregano, cumin, cinnamon, allspice, salt, and pepper.
- Add the pork chunks to the bowl and stir to coat them well in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight.
- Preheat your oven to 325°F.
- Remove the pork from the marinade and place it in a large baking dish. Pour the marinade over the pork.
- Cover the dish with foil and bake for about 3-4 hours or until the pork is very tender and falls apart easily.
- When the pork is done, remove it from the oven and let it rest for a few minutes.
- Serve the cochinita pibil with warm corn tortillas, pickled onions, cilantro, and lime wedges on the side.
