As a gastronomic reference in Yucatecan cuisine, the first edition of the Week of Queso de Bola (Edam Cheese) 2023 will take place from the 24th to the 31st of this month, where 30 restaurants will participate by offering and promoting their menu of dishes with this product, shared Claudia González Góngora, President of the National Chamber of the Restaurant Industry and Seasoned Foods (Canirac) Yucatán.

“We all know the importance of this ingredient in gastronomy, but it has also been adopted, and it is known that Yucatán is among its biggest consumers,” she commented.

She invited restaurants that wish to participate to join, as they still have time to be part of this event by approaching or contacting Canirac.

Fernando Rojas Sánchez, ambassador of the brand El Gallo Azul, shared that from the Porfiriato era to today, Edam cheese, better known as queso de bola, has become a gastronomic reference in the Southeast of the Mexican Republic, but particularly in Yucatán. It is an ingredient that has conquered the palates of national and international tourists, but most importantly, the hearts of Yucatecans.

He explained that the participating restaurants will offer and promote their menu of dishes with queso de bola or create a special menu, promotion, or package during the week of the event.

Around 30 important restaurants in the city and more than five types of cuisine will participate, with notable restaurants such as Hacienda Teya, Manjar Blanco, Fiesta Americana, Kinich, La Lupita, Los Almendros, Eladio’s Bar, Mercado 60, La Cockte, El Templo, and Bejar Coffee, among others.

“As part of the event, official recognitions will be awarded to all participating restaurants for incorporating the unique and original queso de bola from the region into their menu, by the brand El Gallo Azul. This serves as a guarantee for consumers that their dishes are prepared with the unique and original product,” he emphasized.

José Luis Martínez Semerena, Director of Economic Development and Tourism of the municipality, highlighted that Yucatecans have known how to take advantage of this type of ingredient, even mixing it with others to create new dishes.

“That’s why we wanted to honor it during this week with special offers, so that people can participate in various restaurants. Our goal is to motivate the public, both local and tourists, to enjoy a wide variety of delicious dishes and desserts recognized and appreciated worldwide, where queso de bola has become the main ingredient in important Yucatecan gastronomic creations,” he concluded.
