In an event of great relevance for national gastronomy, the Mexican Gastronomic Guide 2025 recognized the 250 best restaurants in the country, highlighting the inclusion of culinary exponents from the 32 states of the country. The award ceremony, held in the city of Oaxaca, reaffirmed the diversity and richness of Mexican cuisine.
Among the distinguished ones, the Aldea Xbatún Restaurant, located in the historic city and Magical Town of Valladolid, was awarded this prestigious recognition. This award highlights its commitment to authenticity, the quality of its ingredients, and the excellence in the gastronomic experience it offers its diners.
Its owner, José Rodolfo Cen Canché, received the award at the ceremony held in Oaxaca, accompanied by his mother, Irma Canché Poot, and his wife, Martha Fernanda Mex Chan, who are both traditional cooks.
Doña Irma Canché is a traditional Mayan cook who has dedicated her life to preserving the ancestral flavors of her culture. From a very young age, she learned the secrets of cooking inherited from past generations, becoming a fundamental pillar of the gastronomic offering of Aldea Xbatún. Her knowledge and passion for Mayan cuisine are reflected in each dish, transmitting not only authentic flavors but also the history and love for her roots. Her heritage and knowledge of cooking come from her family, and we are very proud to be able to share a little of our roots, our culture, but above all, a little piece of our heart within our ancestral Mayan cuisine.

The Mexican Gastronomic Guide, created by Culinaria Mexicana and led by renowned chef and journalist Claudio Poblete, celebrates its 11th anniversary in this edition. With the support of Larousse Cocina, S. Pellegrino, and Nespresso, this prestigious publication highlights the best of national gastronomy. Its selection is made by a jury of 80 experts, including journalists, gastronomic entrepreneurs, and sommeliers, who evaluate the trajectory, quality, creativity, and consistency of the restaurants, as well as the service and experiences they offer.
More than a decade of existence has consolidated this guide as a key reference for the restaurant industry, promoting and recognizing the most outstanding gastronomic spaces in the country. This year’s awards ceremony took place on January 27, 2025, at the Grand Fiesta Americana Hotel in Oaxaca, in an event full of emotion and recognition of culinary excellence.
