Originally from the Yucatan Peninsula, cochinita pibil is an ancestral Mayan dish consisting of pork marinated with achiote, wrapped in banana leaves and baked underground. It is shredded and served with tortillas, pickled red onion and sauces.
Lime soup (#53, rating 4.50)
Also originally from Yucatan, this chicken and tomato soup has spices such as oregano, garlic and thyme, as well as the citrus touch of lime and the spiciness of habanero chili.
Pozole (#73, rating 4.46)
A classic of Mexican parties, this stew made from pozole corn and meat (pork, chicken or beef) has three main variants:

In Mérida there is a wide variety of places to try cochinita pibil and lime soup, from upmarket restaurants to traditional neighborhood markets. Pozole is a dish more typical of central Mexico, but can also be found in restaurants in Mérida.
